I am thinking of a short stay in early September (8-11). Will many places be closed at that time? Also, is it historically warm enough for outdoor pools to be open and ocean swimming?

One of my favorite time to go to the beach.  It's alot less crowded, cheaper, AND still warm,  I can't think of any hotels that close their pools.  The ocean is till warm too.  I have swam in the ocean in October!  Not that it is expected, but bring a long sleave shirt just in case it does cool down in the evening.

Hi Tony,
The ocean will definitely still be warm enough to swim mid September. It's a lovely time to visit.  No crowds and the weather is still plenty warm enough that you might only need a light jacket in the evenings.  Almost everything is still open except for the outdoor rides and they generally open on the weekends till the end of September.  But the shops and restaurants are open with a few exceptions. I think you'll find that off season is a great time to visit OC.
